Festive Biscuits

For this recipe you will need:

300g plain flour (we used wheat-free)
100g butter/marg
100g light muscovado sugar
1 teaspoon baking powder
1 teaspoon cinnamon
Pinch of salt
3 tablespoons golden syrup
2 eggs
100g icing sugar
2 tablespoons water
Cake decorations (we used mini smarties)
1 toddler (live) – optional
Patience (1 truckload – only necessary if also using toddler)

Sift the flour into a large bowl, then add the salt, baking powder and cinnamon. Give it a good mix before adding the sugar. Scrape up the handfuls of flour the toddler has thrown onto the table, put them back in the bowl and stir.

Put three tablespoons of golden syrup into a cup, and break one of the eggs into it. Clean raw egg off toddler’s hands after he has squished the second egg in his fist. Get another egg from the cupboard and put it out of his reach. Beat egg and syrup mixture together, add to the flour and combine. Add the second beaten egg a bit at a time to make sure the dough isn’t too wet.

Scrape remaining dough off toddler’s jumper, form the whole lot into a ball and wrap in cling film. Put in the fridge to chill for 20 minutes, while changing toddler’s entire outfit.

Put plenty of flour onto a worktop or board, and a rolling pin. Divide the dough in two, making it easier to work with, then roll out into a sheet and use some Christmas themed shape cutters to cut out the biscuits, placing them onto a greased and floured baking sheet. Grab offcuts of dough before toddler can eat them, reform and repeat.

Preheat over to 160 degrees, and cook biscuits for about 15 minutes – check them at about 12 minutes, and keep cooking if they’re still soft to the touch. When done, place them on a rack to cool (they will crisp up while cooling down).

For the icing, sift 100g of icing sugar into a bowl and add two tablespoons of water. If the consistency’s not quite right either add more sugar or a tiny bit more water. Spread onto the cooled biscuits and decorate with your festive topping of choice. Remove icing spoon from toddler’s mouth and change his outfit again.
